For the batter: 1 teaspoon of vanilla ¾ cup raw honey ½ cup softened butter 1 egg 2 cups einkorn flour 2 tablespoons of cinnamon ½ teaspoon baking soda ½ teaspoon salt ½ teaspoon cream of tartar For the coating: 1 tablespoon of cinnamon 3 tablespoons of coconut sugar Preheat oven to 375°F. Line a baking sheet with parchment paper. Mix together the ingredients listed in the “for the batter” section. Next, in a separate bowl, mix the ingredients for the coating together. Scoop out small balls of dough and roll them in the cinnamon and coconut sugar to coat. It helps to spray coconut oil onto your hands. Place the balls of dough on a cookie sheet and bake for 11 minutes. Yields about 35 cookies.
